Crispy sweet potato wedges

INGREDIENTS
  • 600g sweet potatoes, large
  • 40ml olive oil
  • Large pinch salt
  • Large pinch pepper
  • ¼ tsp sweet paprika

METHOD

Cut the sweet potatoes into 2cm thick wedges, about 5cm long.

Place potato wedges in a pot with a good pinch of salt and bring to the boil. Allow to boil for 8 minutes.

Remove the sweet potatoes from the pot and allow them to steam dry.

Place these in a large roasting tray in a single layer and add the olive oil, paprika and seasoning.

Place in a preheated oven at 200°C for about 30 minutes and bake until golden and crispy.

Serve on a platter with guacamole.
